Mexican tacos. I know you’ll love them!

I have to admit that I am a huge fan of Mexican food since I lived there for about three years. Ever since I left the country I’ve tried to find a good restaurant of Mexican food where I live but that seems to be an impossible dream.

We have the problem of adding “our touch” to Mexican food so it ends up being a pretty normal dish instead of what I remember. That’s why we call Taco bell a Mexican restaurant when in fact is just an american idea of what a Mexican restaurant really is.

That’s why I decided to post a couple of recipes for Mexican tacos that I learned from my mom who cleverly thought girls these days would know nothing about home chores and I would starve to death if I got married and didn’t know how to do a scrambled egg. Well there was a possibility of my turning into an “obese dude” thanks to the always trustful McDonald’s but anyway, there you go:

Tacos al Pastor (Shepherd style tacos)

Ingredients

12 corn tortillas, large size preferably
2lb. pork loin
¼ cup vinegar
1 cup orange juice
1 teaspoon garlic powder
½ teaspoon ground black pepper
2 teaspoons chili powder
2 teaspoons of achiote paste (rehydrate peppers to soft, peel, seed and mash or puree)
½ pineapple, cored and finely chopped
2 onions, finely chopped
1 bunch fresh cilantro, finely chopped
6 lemons, cut into 4 segments
Salt to taste

Directions

1. In a bowl, combine the vinegar, orange juice, ground black pepper, garlic powder, chili powder, achiote and salt until every ingredient is dissolved.
2. Slice the pork into small pieces and marinate it with the mix. Leave it there for an hour.
3. Grease a pan and fry the pork in it. When cooked, put the rest of the marinade in the pan with the pork and let it heat for about 6 minutes.
4. Chop the pork into small cubes.
5. Grease another pan with some of the marinade that was left in the pork pan and fry the tortillas trying to keep them soft. Don’t let them turn into nachos :)
6. Place the chopped pork into the fried tortillas and top them with the chopped cilantro, onion and pineapple.
7. Place 2 or 3 tacos in a plate and decorate with the lemon segments.

As this post could get too big, I will place other taco recipes in different posts and the sauces to dress them.
